I fell in love with Conch Fritters on my very first trip to the Caribbean. Conch Fritters are the hush puppy like treats you find in everyplace from seaside shacks to Jimmy Buffet’s Margaritaville. The star ingredient is the conch, which is the meat that comes out of those giant shells you buy in tourist shops and in which you can hear the sea.
